It’s time for our first basket of the season and we could not be more excited! We will try, every Wednesday, to send out a list of what will be in your basket, as well as updates on what is going on with the farm. We’ll also include recipe ideas and anything else that seems interesting.
Your first spring basket will be a very green one. It is the season for greens and after a long winter of nothing fresh, we love to stuff ourselves full of the green goodness that flows out of the garden. It will include:
looseleaf lettuce mix
red veined sorrel
kale
turnip greens
green onions
baby radishes
oregano
asparagus (from our friends at Blueberry Hill Farm)
Some of you may have never seen sorrel before. It is a green leaf with red veins and has a tart, lemony taste. We include small leaves in our salad mix. There are many recipes that use sorrel - sorrel pesto for pasta or fish and sorrel soup. Our favorite way to eat sorrel is in a goat cheese and sorrel frittata. Here’s our recipe:
Sorrel and Goat Cheese Frittata
1 or 2 tablespoons of butter
1 small onion, chopped (or your green onions would work well)
1 garlic clove crushed
1/2 to 1 cup chopped sorrel
6 eggs, beaten
1/4 to 1/2 cup of crumbled goat cheese
freshly ground pepper
- Melt the butter over medium heat.
- Add the onion and a 1/4 teaspoon of salt and saute until soft.
- Mix the eggs, the goat cheese, and the pepper together.
- When the onions are soft, stir in the garlic and the sorrel for one minute or so.
- Add the egg and cheese mixture and give a stir to combine. Cook over medium-low heat until the bottom is set.
- Place under the broiler for a few minutes until the top is set.
- Enjoy!
Things at the farm are very good. Ben is in the field planting several hundred tomato transplants that look strong and healthy. We still have basil, melons, winter squash, and sweet potatoes to get in the ground, as well as corn, beans, edamame, and okra, but everything is looking great right now. And we are looking forward to sharing this growing season with you and hope you enjoy your first basket.
